Seafood Cook Off Experience

Living on the East coast you have to be a seafood lover, recently I discovered a contest to win a trip to New Orleans for a wonderful experience filled with lots of fine dining. It is all in celebration of the Great American Seafood Cook Off, all you have to do to enter is visit the site WWW.GreatAmericanSeafoodcookoff.com and click on the red button that says "Enter to Win". You'll get a look at the 5 finalist entries seafood dishes from the contest and you can also view the recipe that created them. I would have to say my favorite from the cook off would have to be Chef Paul Anders from Colorado and his recipe for Colorado Striped Bass Panzanella. I'm particular to Bass and don't really care for Shrimp all that much so it really made the choice easy for me. I also like the added ingrediants of cucumber and tomato, for me I might have to find a substitute for the vinegar or perhaps use a little less as I don't care to much for the flavor it gives. This is a great looking recipe that is sustainable and allows you to use some of your own garden vegetables or local vegetables in the recipe and can be created quickly in your own home. What would your cook off favorite be?
