Seafood Delights

Living on the east coast there is so much emphasis on the sea, even when it comes to our food choices. The Fishing Industry is such a big part of our history and culture that you see it embedded in our culture. There are so many great seafood dishes to try it is incredible for the taste buds. One of my favorite is a very simple dish created with Salmon. You would start by baking a salmon of course heavy on the butter and coated with a garlic seasoning and chive. The other end is rice cooked with a bit of soya sauce in the water and a package of onion soup mix as well. Really simple. You serve the salmon over the bed of rice which you can ad other veggies of your choice if you so desire sometimes we will cook up some red or green peppers and chopped onion to add to the dinner. I think it might still need a little work to compete with the greats at the cook off's but it is a favorite of our's. What are some of your favorite seafood dish I would love to here from you for some new ideas. There are many great seafoodCook off events, like the "Great American Seafood Cook Off" in Louisiana where they match up the great chef's from all over and see who will be crowned the king of seafood. It's a great event that can give you all kinds of ideas for new recipe's to try in your home.

Seafood Cook Off Experience

Living on the East coast you have to be a seafood lover, recently I discovered a contest to win a trip to New Orleans for a wonderful experience filled with lots of fine dining. It is all in celebration of the Great American Seafood Cook Off, all you have to do to enter is visit the site WWW.GreatAmericanSeafoodcookoff.com and click on the red button that says "Enter to Win". You'll get a look at the 5 finalist entries seafood dishes from the contest and you can also view the recipe that created them. I would have to say my favorite from the cook off would have to be Chef Paul Anders from Colorado and his recipe for Colorado Striped Bass Panzanella. I'm particular to Bass and don't really care for Shrimp all that much so it really made the choice easy for me. I also like the added ingrediants of cucumber and tomato, for me I might have to find a substitute for the vinegar or perhaps use a little less as I don't care to much for the flavor it gives. This is a great looking recipe that is sustainable and allows you to use some of your own garden vegetables or local vegetables in the recipe and can be created quickly in your own home. What would your cook off favorite be?
